Video: Ye olde kitchen challenge

Watch or download our video about cooking ancient recipes

Today we take recipe books for granted as they gently guide us, in great detail, through the process of creating delicious food. But a few hundred years ago, the only place to find recipes was in the homes of the wealthy, literate classes – a rough written record of their dining exploits.

In this film, archivist Helen Wakely presents senior sous-chef Zack Mila with such a recipe from 300 years ago. In the absence of vital details, such as cooking times and temperatures, is Zack’s experience enough to bring the past back to delicious life?
